Air Fryer Chicken and Potatoes is a super easy weeknight dinner idea. This simple air fryer recipes consists of bone-in chicken thighs, mini gold potatoes and colorful bell peppers.

- 2 Lbs Bone-In, Skin-On Chicken Thighs
- 1 Lb Mini Gold Potatoes – halved
- 1 Red Bell Pepper – seeded and chopped
- 1 Orange Bell Pepper – seeded and chopped
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Onion Powder
- 1/4 teaspoon Cumin
- Generous Pinch Salt/Pepper
Instructions

- Mix garlic powder, paprika, onion powder, cumin, salt and pepper.
- Coat chicken thighs in oil then sprinkle 2/3 of spice mixture over the thighs. Transfer to greased air fryer basket, placing off to one side.
- Toss potatoes with oil and remaining spices. Transfer to air fryer basket next to the chicken thighs.
- Air fry at 400ºF 10 minutes.
- Add peppers to the potatoes, toss and sprinkle with salt.
- Air fry at 400ºF for 10-15 more minutes or until chicken thighs are cooked through (165ºF internal temp).
Notes
Feel free to use 2 teaspoons of your favorite spice blend instead of the spices in this recipe.
